Pumpkin Spice Waffles

Pumpkin Spice Waffles with raspberries and whipped cream

Ingredients

 1 ¾ cups plain flour

2 tsp brown sugar

1 ½ tsp baking powder

1 tsp baking soda

1 tsp mixed spice

1 tsp salt

1 ¼ cups buttermilk

1 cup canned pumpkin puree

2 large eggs

¼ cup unsalted butter, melted

Method:

  1. Preheat oven to 200 and heat up waffle iron
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, spice and salt
  3. In a large bowl whisk together buttermilk, pumpkin puree, eggs and butter. Pour over the dry ingredients and stir using rubber spatula until just combined
  4. Oil the waffle iron to prevent sticking
  5. Pour 1 ladle of the mixture into the waffle iron, close gently and cook until golden brown and crisp (4-5 minutes), keep warm in the oven and serve as soon as possible
