Ingredients
1 ¾ cups plain flour
2 tsp brown sugar
1 ½ tsp baking powder
1 tsp baking soda
1 tsp mixed spice
1 tsp salt
1 ¼ cups buttermilk
1 cup canned pumpkin puree
2 large eggs
¼ cup unsalted butter, melted
Method:
- Preheat oven to 200 and heat up waffle iron
- In a large bowl, combine flour, sugar, baking powder, baking soda, spice and salt
- In a large bowl whisk together buttermilk, pumpkin puree, eggs and butter. Pour over the dry ingredients and stir using rubber spatula until just combined
- Oil the waffle iron to prevent sticking
- Pour 1 ladle of the mixture into the waffle iron, close gently and cook until golden brown and crisp (4-5 minutes), keep warm in the oven and serve as soon as possible
