Ingredients
100g plain flour
1 egg, separated
150ml milk
25g butter, melted
Bunch of chives, thinly chopped
Oil for cooking
Pairs great with Citrus Cured Salmon Gravlax
Method
- For the blinis mix, tip the flour into a bowl, then season. Make a well in the middle, add the egg yolk and half the milk. Whilst until smooth, then gradually add the rest of the milk, the butter and chives
- Whisk the egg whites until starting to stiffen, then fold into the batter
- To cook, lightly greases a frying pan, then sizzle small spoonfuls for 2-3 minutes on each side until golden, flipping them over when bubbling
- Once cooked and slightly cooled, pile up with toppings and enjoy
