Garden Greens Gnocchi

All sorts of green things help to make this ultimate comfort carb into a relatively healthy dinner option

 

Ingredients

1 pack of gnocchi

100g frozen or fresh peas

100g green beans (halved)

100g sugar snap peas (halved)

100g mange tout (sliced)

Handful of rocket

Handful of grated parmesan

 

For the dressing:

1 shallot

2 tbsp olive oil

1 tbsp red wine vinegar

Handful mint leaves

Handful basil leaves

Juice and zest of one lemon

2 tbsp pine nuts

Salt & freshly cracked black pepper to season

 

Method

  1. Cook the peas until just warmed through (being careful not to over boil them)
  2. Prepare all the other greens (other than the rocket) by ensuring they are roughly chopped to bite sized pieces
  3. For the dressing, place all the ingredients into a blend and blitz until lightly textured
  4. Cook the gnocchi for around 5 minutes (according to the cooking instructions), drain and then mix through with all ingredients until well tossed
  5. Top with additional cheese and pepper to taste, and enjoy
