This is a ridiculously simple one tray recipe, making it perfect for week day dining when you have neither time or patience to play with.
4 chicken breasts
3 cloves of garlic
250ml balsamic vinegar
250ml olive oil
A mixture of any vegetables you have in the fridge. I would recommend a combination of any of the following: sweet potatoes, butternut squash, peppers, broccoli, cauliflower, carrots, aubergine, courgette, green beans, cherry tomatoes
Handful fresh basil
Salt & pepper to season
- Pre-heat the oven to 180
- Chop up all the vegetables to around the same size to ensure that they will all cook in around the same time
- Mix together the vinegar, oil, garlic (crushed), herbs and seasoning in a large sealable freezer bag, adding the chicken and massaging it well to ensure the flavor gets into all the meat
- Place the vegetable, chicken and all excess marinade in a large baking tray, trying to ensure that there’s not cross over of items on the tray. Cook in the centre of a hot oven for around 25 minutes or until the chicken is cooked through
Perfect served with either a fresh green salad or on a pile of couscous depending on whether you need those extra carby comforts.
