Hot Smoked Salmon with Corn & Courgette Fritters

Salmon, courgette & corn

If you need more veggies in your life, this is one very easy and delicious way to do it

 

Ingredients

1 pack of hot smoked salmon

1 small pot crème fraise

Juice of one lemon

2 ears of corn on the cob

2 spring onions

1 large courgette

1 tsp smoked paprika

50g self-raising flour

2 eggs

40ml milk

Vegetable oil to fry

Sea salt and black pepper to season

 

Method

  1. Break up the hot smoked salmon and mix together with a couple of dollops of crème fraise and a half the lemon juice. Season to taste and set to one side
  2. Standing the corn on their ends, slice down the length of the cob to remove all the corn from the sides. Add these to a new bowl along with the finely sliced spring onions, paprika, flour, eggs and milk
  3. Grate the courgette into a clean tea towel and then tightly squeeze to strain out as much of the excess liquid as possible. Once relatively dry, add this to the corn mixture and combine together until all is fully combined and well mixed
  4. Heat some oil in a frying pan. When hot, ladle the mixture into the pan and smooth down until relatively flat
  5. Cook thoroughly on one side for around 4 minutes before flipping them over and cooking on the other side equally
  6. Once all the mixture has been cooked, pile up the fritters into a stack and top with a healthy dollop of the salmon mixture. Season and add some of the remaining lemon juice to taste and you are good to go!
