Courgette & Red Pepper Savoury Muffins


Simple to make, and perfect to pack up and take on the road with you


2 tbsp fresh basil

2 small courgette

1/5 a large red pepper

3 large eggs

2 tsp baking powder

100g plain flour

½ pack of feta cheese

Small chunk of parmesean

Large splash olive oil

Black pepper to season



  1. Grate courgette into a colander over a bowl and sprinkle over a large pinch of sea salt to help dry it out while prepping the rest of the ingredients
  2. Preheat oven to 200 degrees
  3. Sieve flour and baking powder into a large mixing bowl
  4. Lightly whisk eggs, milk and splash of oil in a jug, pour into large bowl and fold into the dry ingredients
  5. Add crumbled feta, finely chopped pepper, basil and very lightly mixed. Finally work through the courgette until well mixed
  6. Divide out the mixture into deep muffin dishes (1 large tbsp. per hole), sprinkle with grated parmesan, and bake in the centre of the over for around 25 minutes
  7. Once cooked and golden, remove the muffins to cool, then either eat whilst warm, or allow to cool entirely before packing up for the picnic
