Colourful Meringues

Perfect for picnics and parties. Serve with strawberries, raspberries and cream for a really summery treat

 

Ingredients

4 large eggs (whites only)

150g golden caster sugar

3 drops red food colouring

 

Method

  1. Separate the four eggs, and place the whites into a food processor. Turn the speed onto relatively slow, and whip the eggs to get the mixture bubbly. Once this has happened, up the speed to medium and whip more aggressively until stiff peaks are formed
  2. With the speed high still, slowly add the sugar, one tablespoon at a time, until the mixture forms stiff, glossy peaks with a satin effect finish
  3. Line a baking tray with parchment paper and pre-heat the oven to 110 degrees
  4. In your piping bag, run two drips of food colouring down either side of the bag, and then pile in the mixture
  5. Pipe out small swirls of meringues to create little colourful nests and then move into the centre of the oven for around 1 hour (until they sound hollow to tap). Then turn off the oven, and leave the meringues in there to dry out for another 20 minutes or so
  6. Once fully cooled, these can be kept for around 2 weeks in an airtight container
