Cheesy Spinach Dip


Hot, creamy and a perfect accompanying for a couple of glasses of something tasty!


1 tbsp olive oil

1 small onion (or 3 shallots)

2 cloves garlic

280g frozen spinach

1tsp cayenne pepper

120ml milk

180g cream cheese

75g mozzarella and cheddar cheese, grated

1 tsp Worcestershire sauce

Salt and pepper to season

Small handful of cheese to top




  1. Pre-heat the oven to 220 degress
  2. In a food processor, finely chop the onion / shallots, garlic and thawed spinach until lightly textured
  3. With olive oil in a heavy pan, heat through the spinach mixture until well warmed (around 5 minutes). Drain any liquid, and move to a separate bowl for now
  4. Over a medium heat, pour the milk into the pan, and blend in the cream cheese until completely combined and warmed through. Return the spinach mixture, then adding the cheese to the combination. Season with salt, pepper, Worcester sauce and cayenne pepper and keep over the heat, mixing until well combined
  5. Pour the mixture into a pretty baking dish, top with the small handful of left over cheese and either leave until needed, or move straight to the oven
  6. Bake until the mixture is hot and bubbling, ideally with a good crisp toping, which ought to take around 20-25 minutes
  7. Serve with either Ritz crackers or some dark, fruity bread for dipping
