Radish and Fennel Salad

There’s not many ingredients, but as a side with meats, this salad adds a great crunch and a good strong flavour



2 large fennel bulbs

1 bunch of radishes

Ice water

Olive oil to dress (around 4tbsp)

Juice of one lemon

Salt and pepper to season



  1. Trim the top and bottom from the fennel and very finely slice
  2. Do the same with the radishes
  3. Place the veggies into a bowl of iced water to keep them cool and fresh until ready to serve. This will also stop them from browning. Try and leave them in the water for at least 15 minutes before serving to really crips them up
  4. Mix the oil, lemon juice and seasoning together, ready to use as a dressing
  5. Just before serving, drain the vegetables, dress well and serve whist still chilled
