Pina Colada Sorbet


If you like Pina Colada….!



1 fresh pineapple

1 can of light coconut milk

150g granulated sugar

Juice of one lime

2tbls dark rum

1/2 tsp coconut extract



  1. Place all ingredients into a blender and mix until completely smooth
  2. Refrigerate the mixture in the blender jug until cool
  3. Blitz the mixture again, and then move to the freezer
  4. Every few hours, remove the mixture as it’s freezing and blend well
  5. Repeat three or four times, or more if you have more time
  6. After the final mix, pour it out into an airtight container and then freeze one last time, and leave covered until ready to serve
  7. You’ll need to leave it out of the freezer for a few minutes to soften when you’re ready to eat it


It’s a perfect summer treat for a BBQ pudding
