Classic Hummus

It’s not smart, and it’s really not clever, but it is tasty (although it took a few additions / tweaks to get the flavour balance right).

1 can chickpeas

2 cloves of garlic, crushed

1tbsp lemon juice

2tbsp tahini

1 or 2tbsp olive oil

1/5tsp cumin

Drizzle sesame oil

1tsp dried chili flakes

Sale and pepper to season

  1. Pulse the chickpeas in a blend until they are completely smooth
  2. Add the garlic, lemon juice, tahini and cumin and pulse until combined. Then set to mix and slowly add the olive oil to get a good texture (not too thick). If needed, cold water can also be used to loosen the mixture
  3. Season well, and then spoon out into pretty bowl and move to the fridge to chill
  4. Before serving, swirl the top with a little sesame oil, and top with some dried chili flakes and some sea salt
