Chicken & Beetroot One Pan Balsamic Roast


When you just want to throw things in the oven and leave them, this is a great, healthy option



Bunch of fresh beetroot

1 large red onion

2 cloves garlic

1 handful of fresh asparagus

2 cloves of garlic, sliced

2 leeks (or whatever else you have in the fridge to use up)

2 chicken breasts

3tbsp balsamic vinegar

2 handfuls of fresh spinach

1tbsp fresh pomegranate seeds



  1. Peel and chop all the beetroots into similar sized chunk. Quarter the onion and thinly slice the garlic. Remove the ends from the asparagus and chop up any other veggies to be included. Place them all into a baking tray and drizzle over oil to roast them in
  2. Place the two chicken breasts on top of the mixture and season them well
  3. Put the baking tray into the oven at 180 degrees for around 20 minutes
  4. Once coloured slightly, pile them to the side of the tray and drizzle over the balsamic vinegar.
  5. Layer out the asparagus on the other side of the tray and return to the oven for around 10 minutes while the asparagus cooks and the balsamic vinegar reduced
  6. Once everything looks cooked, remove from the oven and mix all the ingredients together. Add the spinach to the mix to allow it to wilt, and serve into two large bowls
  7. Sprinkle over the pomegranate seeds before serving
