Simple slaw

Simple Slaw

There’s no real rule for this one. Just dig through the fridge, shred a load of veggies, leave the flavours to develop and then serve!



½ a white cabbage

½ red cabbage

½ Chinese cabbage

4 carrots

1 small (or 1 large) red onion

2 or 3 tablespoons of natural yogurt

Glug of virgin olive oil

1tsp cayenne pepper

1 tsp ground cumin

3tblsp white wine vinegar



  1. If you’re a cheat like me, work all your veggies through the shredding fitting on the food processor to get them down to really thin slices. If you have more time on your hands, feel free to either grate or very finely chop them
  2. In a large mixing bowl, add all the veggies to the yogurt, oil spices and vinegar, then mix well with your hands until the whole lot if well coated
  3. Leave in the fridge to chill and to let the flavours develop, for a few hours ideally, then serve straight from the fridge


Ideal as a side with any slow cooked meats, or to bulk up a healthy dinner
